You are correct. Aside from gas stations, you don't see too many credit card fees on the consumer side. However, I assure you that we pay for them in the cost of the item.

If Bitcoin is used as a payment system, it would need to cost a minute transaction fee. Lightning network developers are working on this. If successful, the fees should be far less than the 2% credit card transaction fees.
